Turkey tip: roast it upside down.

It won't be as pretty if you carve the bird at the table, but the meat will be so succulent no one will even notice.

I learned this trick a few years ago, and it works beautifully. After the bird is stuffed and trussed, turn it breast side down and roast, as usual.
